How to effortlessly make this barley salad

This recipe is prepared without complicated steps or special techniques.

  1. First, soak the pearl barley for a few hours, then cook it in a larger amount of water (you can also do this the day before).
  2. Cook the chicken in a pan or in the oven, simply seasoned with salt, pepper, and olive oil.
  3. In a bowl with the pearl barley and chicken, add the vegetables – tomatoes, cucumber, bell pepper, and onion.
  4. Drizzle with a simple dressing made from olive oil, lemon juice, and spices.
  5. Gently mix and let the flavors combine.

METHOD

  • Barley

    Put the pearl barley into a bowl and pour over one liter of water, making sure it is covered. Soak overnight.

  • Cook the barley

    Rinse the pearl barley under running water and place it in a large pot. Add one liter of water and salt. Bring to a boil, then cover with a lid and cook for 20–25 minutes. Drain the pearl barley and let it cool to room temperature. To speed up the process, rinse it under cold water to cool it down.

  • Dressing

    Mix the ingredients for the dressing: olive oil, lemon juice, salt, pepper, oregano, and grated garlic. Set aside until ready to use.

  • Chicken

    Cut the chicken breasts into smaller cubes and place them in a bowl. Add lemon zest, rosemary, garlic, lemon juice, salt, and olive oil. Mix well and set aside. Place a large pan over medium heat. Add the chicken and cook for about 5 minutes, until golden brown.

  • Salad

    In a bowl, combine the pearl barley, chopped cucumber, halved tomatoes, thinly sliced onion, corn, and chicken. Add the dressing, gently toss, and serve. Store in the refrigerator.
